And it is no wonder, for it sure is not everyday that one can dine at a height of 226 metres above ground that affords panoramic views over the whole of Singapore , as well as hints of the isles of Malaysia and Indonesia . Located on the 70 th floor of renowned Swissôtel The Stamford right in the heart of the city, this premier restaurant will intensify anyone’s culinary adventure not just by its sheer height alone, but also with its capability to serve up exquisitely prepared food and wines to enthrall all its guests.
The Vibe The most striking feature of this restaurant has got to be its three-storey high glass window panels that allow the guests to appreciate rare unobstructed views of Singapore and a little beyond its frontiers. Also, the tables are cleverly positioned and elevated in an amphitheatre style such that all diners would be able to enjoy the breathtaking views even if they are not seated close to the edge.
On its polished interiors, the vibe that Equinox Restaurant sends out is remarkably oriental chic; from its handcrafted Chinese-inspired screens and delicate rice-paper lanterns to the suspended wooden trellises and deep red walls. Its understated elegance is charismatic, and also gives off an attractively laidback aura, where patrons can dine at a leisurely pace with ease, and not feel the least bit rushed.
The Cuisine In the vanguard of fusion cooking, the Equinox Restaurant shows apparent strength in its ability to deliver, or even surpass expectations. This restaurant celebrates the marriage of two cuisines: pure Asian and pure Western, in all its complexities from two supporting kitchens. Its menu is thorough and diverse, with something to suit everyone’s preferences. Choice appetizers include the finely sliced Seared Beef Tenderloin Carpaccio served with artichoke heart, green olive tepenade and hazelnut-sherry vinaigrette ($29) that offered a mélange of tantalizing flavours, as well as the nicely grilled Sea Scallop ($27) served atop a bed of Thai green mango salad with a side of sweet Thai chilli. Prime your appetite further with some premium seasonal delicacies like the Russian caviar or shucked oysters.
For the main course, do try their specialty Pan-fried Tiger Prawn and Seared Scallop ($47) that is perched over a finely prepared parsnip puree, and served with sautéed leek and broccoli on its side. The prawn is satisfying large and crunchy, and I especially appreciated its natural sweetness that was matched against the aromas that lingered from the crab-essence butter sauce which it was simmered in. Another dish that is worth a mention is the Grilled Seabass ($37), that is a lovely combination of soft tender fish meat, chive potato mash, bits of tomato and drizzled generously in a preserved lemon salsa.
When you are done with dinner, dessert will most definitely be on the agenda. Reach a new sugar high with the highly recommended Sweet Temptation platter ($32) that is a beautifully conceived selection of masterfully prepared desserts designed for two persons. Enjoy a rich praline chocolate passion mousse, poached rhubarb with passionfruit sorbet and a dark chocolate gelee with mint foam and Ivory raspberry cream that are all delicately presented as a feast for the taste buds, as well as for the eyes!
The Service The service staff here is a well-groomed and professionally trained team who was alert enough to be attentive without being intrusive. Generally, I liked how courteous they were at all times, and were also quick to offer any assistance when needed. Should you need any wine recommendations, I hear that Mr. Paul Joseph, who is the manager of the restaurant, is quite the expert in the appropriate pairings to go with the dishes.
The SD Food Advisor’s take on Equinox This restaurant is immaculate, from the décor to the excellent culinary delivery, and most definitely its impeccable service standards. It is no wonder many have been gravitated towards this fine-dining restaurant over the years, since it started operation five years ago. This is haute cuisine in one of the finest settings, and most appropriate for business entertaining, sharing fine moments with the love of your life, or simply celebrating life's milestones. However, do be prepared to pay pretty hefty prices for a meal here, as a dinner for two can set you back by at least $50 per person. Nevertheless, I feel that the experience that you will get from your evening in Equinox Restaurant might just make the splurge a worthwhile venture once in a while.
