Jade, a beautiful and elegant precious stone, has been treasured by the Chinese for centuries. The restaurant, like its namesake, displays such admirable qualities. Located in the charming Fullerton Hotel, Jade serves an eclectic range of modern Chinese cuisine that is rather difficult to find elsewhere. Having opened in 2000, it has since become a benchmark for quality in the local culinary scene. Demonstrating facets of excellence that Tung Lok restaurants are so famous for, Jade offers a modern twist to Chinese cuisine that will surprise and fascinate the discerning diner.
The Vibe Be greeted by the majestic high ceilings and stately drapes lining the classic window panes as one peers through for a glimpse of the secret garden. Gold ingot imprints alongside the drapes emanates a Western, yet simultaneously Oriental aura, aptly reflective of the modern Chinese theme that the restaurant boasts. Tall slick looking bamboo trees placed sparsely at different corners offer a touch of greenery and style. Curved matte silver-like dividers act as private rooms, offering privacy to diners who prefer a more conducive enviroment for business luncheons.
The Food Cuisine at Jade is indeed unsurpassed in quality. Meticulous attention is paid to every detail, from the provision of long chopsticks to facilitate yu sheng - tossing, to the breathtakingly exquisite presentation of every dish. It seems that chefs at Jade are all perfectionists, a fact which will delight astute fans of Chinese cuisine.
For a tantalising start to any meal, try the Double-boiled Seafood Soup & Conpoy in Golden Pumpkin($22 per portion). Served in a carved pumpkin, the steaming hot fragrant soup was reminiscent of home-cooked goodness, filled to the brim with seafood favourites like scallop and prawn. The savoury flavour of the soup was well balanced by the sweetness of the pumpkin, providing a contrasting delight for the palate.
More seafood goodness was apparent in the Wok-fried Crispy Prawns with Roselle Flower Reduction & Sichuan chilli($32 per portion). The prawns were very crispy on the outside yet crunchy inside,evident of its freshness. A burst of flavours - sweet, salty, spicy and sour, left us in a blissful state of confusion. This was accredited to the ingenious fusion of ingredients such as the Australian finger lime which contributed a sour tinge to the dish itself. The Steamed Fillet of Marble Goby was a marvellous example of why fish is always best cooked this way. The fish served in a special blended soy sauce, was aromatic and fresh and somehow, amazingly addictive. For something more substantial, order the Traditional Steamed Rice with Preserved Lunar Meats($22 per portion). Carefully spooned into an intricately-carved jade bowl, the aroma of dish, was apparent as soon as the lid was removed. Though a tad salty, the fragrance from the stewed meat infused into the rice, made the dish a delicacy in itself. For a regal end to your meal, order Jade's signature dessert: Chef Special Dessert Trio with Mixed Fruits($15). Served in a huge porcelain bowl of crushed ice alongside with dry ice oozing from the teapot giving a mystique feel, and adorned with petite branches of leaves; the trio of sesame pudding, ice jelly and cream of pumpkin accompanied by assorted fruits will leave you transfixed not just by its taste, but most of all, by its intriguing presentation.
The Service The staff was understandably busy as it was peak period, just before Chinese New Year. However, service was still professional, though the dishes came after quite a wait. Of course, this could also be attributed to the chefs' relentless pursuit of perfection, presentation-wise.
The SD Food Advisor's take on Jade: Arguably one of the better Chinese restaurants in Singapore. For those with an appreciation of finer things in life, Jade Restaurant will not fail to disappoint in its gastronomic and creative presentation of dishes. Do note that that some of the items mentioned are only available as part of a set menu. Make reservations in advanced, or be prepared to be disappointed, especially during this hectic peak season.
